THE FLAVORS OF CENTRAL MEXICO

INTRODUCTION:

Mexican food is based on the melding of cultures. Most of the Mexican food today is the combination of the ancient traditions and the culinary trends introduced by the Spanish colonists. The ancient cultures of Mexico included in their diet; corn, chilies, herbs, beans , tomatoes, squash, peanuts, chocolate, fish and turkey and the Spanish brought; rice, beef, pork, chicken, wine, garlic and onion.


Mexican food is famous for it´s intense and varied flavors and blessed with an incredible array of fruits and vegetables and if this were not enough, Mexicans are also gifted cooks.

This program is an introduction to Mexican Cuisine and culture as the food varies by region because of climate, geography and ethnic differences.

Tentative Itinerary:

Day 1.-Welcome to Guadalajara, the “ City of the Roses”. Transportation and check in at our hotel. Afternoon tour of the city, followed by a ride in a traditional “calandria” ( horse and buggy) that will take us to the door of the restaurant for our Welcome dinner. Before dinner we will receive an introduction to Mexican Food by one of the best chefs in the city. He will also give us a private tour of his kitchen and wine cellar.

Day 2.- Breakfast. This morning we will have a full day tour to Tequila, Mexico´s national drink. We will tour the distillery, learn about the process of elaboration, become tequila experts and our lunch menu will include tequila in the preparation of our food too! Return to Guadalajara and stop at Tlaquepaque, the artisan village. After free time for shopping, we will have lunch in a local restaurant where we will learn all about one of the most popular regional dishes, the pozole.

Day 3.- Breakfast. Departure to Guanajuato ( 3 hours aprox.). We will tour this fascinating city that is a world heritage site. After lunch we will continue to one of Mexico´s prettiest towns, San Miguel Allende. Check in and overnight.

Day 4.- Breakfast. Morning tour of San Miguel Allende followed by a special cooking class called


 “Chilies and more chilies”. If you thought that everything in Mexico was going to be hot, be prepared for a surprise. Our host, is the proud owner of one of the best restaurants in town. After our cooking lesson and lunch we will visit the local market , the key part of the Mexican life. We will all have a shopping list of fruit and vegetables for our special tasting tonight.

Day 5.- Breakfast. Departure to Puebla. On route we will visit the city of Queretaro, another colonial gem. Arrival and check in at our hotel in Puebla. The city of Puebla, known as the “City of Angels” is also a World Heritage site and is famous worldwide for it´s impressive architecture and the regional gastronomy. The Convents in Puebla were very important in the creation and evolution of the Puebla cuisine, especially the Convent of Santa Rosa, where the Mole Poblano was invented in the 17th century. 

Day 6.-  Breakfast. This morning we will take a 3 hour cooking class,  where the executive chef will show us all about the traditional Puebla cuisine along with the ancient  prehispanic techniques. After lunch, we will have a tour of the city and visit the Ex-Convent of Santa Rosa, now a museum where the kitchen is one of the main attractions.

Day 7.- Breakfast. Departure to Mexico City. Arrival and check in at our hotel. Tour of the city and our farewell dinner at a local restaurant with a complete Mexican show of light and color.

Day 8.- Transfer to the airport.
